No need for a fancy pizza oven, making pizza on the barbecue is incredibly easy.  This can be a great option for entertaining or an easy dinner.

Step1- The Dough

This is where you determine the type of person you want to be today.  I have been known to be the show off from time to time, for the most part I am a working mom with the motto. “I ain’t got time for that shit”. The less time I spend doing my domestic duties the more time I have to have fun. 

Now if you are in the mood to show off you should definitely make the dough from scratch.  This is actually not that hard, but it does take some time as well as quite a few ingredients. I have included a link to a great recipe that I have successfully executed from the blog Kitchn. If you are entertaining, everyone is always impressed when you say that you made anything from scratch.

Now if you just don’t care what anybody thinks today and just want a simple dinner. Just add water and let it rise. I use Weisenberger Pizza Crust Mix that I bought on Amazon, it is very simple to pull off. (FYI – each package makes 2 good size personal pizzas) You will need to give it 30 minutes to rise. No big deal, that just gives you time to have a glass a wine before you actually have to prepare dinner. The nice thing about this dough is you can buy it ahead of time and keep it in the pantry and use it last minute when you don’t have anything else planned for dinner or want to impress those last minute guests.

Step 2- Make your Pizza

Once your pizza dough has risen you can roll it out into individual pizzas and put the dough directly on the barbecue. Yes I said directly on the grill.  You may want to brush a little olive oil on both sides because you are going to flip the dough once to make sure that both sides toast nicely and you don’t want it to stick to the grill. You will cook it for about 2 minutes on each side.   It only takes a few minutes for the crust to cook on the grill so make sure you are watching it and ready to flip it. The entire process should not take more than 5 minutes. 

Step 3 -Add Toppings

This is also determined by the person you want to be today or what you can find in your refrigerator.  I won’t judge you. 

You can do a build your own pizza bar which is really fun when you have guests.  This could include pizza sauce made from scratch which I have also done and have included a recipe from the blog Simple Life Mom.  Different bowls with an assortment of cheeses, meats and veggies so everyone can build their own unique pizza.

Or you can go simple open a jar of Marinara and a bag of shredded cheese.   And if you feel fancy, a bag of pre-sliced pepperoni. I am not going to lie this dinner was just as satisfying to my family at the previous option and a heck of a lot easier.

Step 4 – Final Fire 

After you have put all of your toppings on your pizza put it back on the grill.  This just takes a few more minutes. You can do this 2 different ways depending on how hot your barbecue is and how may topping you put on your pizza.   You can set it directly on the edge of the grill away from the direct heat. This is how we usually do it, but we are also not big cheese easters so light cheese on a pizza melts really fast.  You can also lay down a piece of foil on the grill under your pizza and put the lid over the grill to heat your toppings a bit faster without worry of burning the bottom of the pizza. Once the cheese is melted your pizza is done and ready to eat.

Alternatives 

Like I said before, I do feel like this is an easy recipe to pull off when you don’t have dinner planned.  If you don’t have marinara or pizza sauce in your cupboard you can use bbq sauce, pesto, alfredo or even create a sauce out of garlic and butter.  You can use any cheese you want and add whatever leftovers or what ever miscellaneous vegetables you have in the refrigerator. The crust comes out similar to a flat bread so the combinations are endless.
