I have such great memories of selling Girl Scout cookies when I was young. To this day I can’t let a year go by without purchasing some. Having several friends with daughters in Girl Scouts, I usually buy more boxes than I actually need. This year I decided to look into recipes that I could make with girl scout cookies. I was pleasantly surprised to see so many different sweet treats that you can make with these cookies. And elevating a simple brownie, Popsicle or popcorn into a delectable dessert.
Samoa / Tagalong Brownies
All you need is a box brownie mix, muffin pan, and a box of Samoas or Tagalongs. Make the brownie mix according to recipe on the box, the only difference is going to be your oven temperature. When you make brownies in a muffin pan, you need to cook them at a slightly higher temperature. Set your oven temperature to 375.
You will need to grease your muffin pans and after making your brownie batter, fill each muffin cup with 1/4 cup of brownie batter to about 3/4 full.
The hardest part is deciding which Girl Scout cookie to use. We decided to make half of our brownies Tagalongs, and half Samoa. To get the most flavor I recommend using a whole cookie for each brownie. First you need to coarsely chop them. Fold half of them in to the batter and add half to the top. Bake for 25 – 30 minutes. Keep your eye on them, and once you see them crack across the top and are firm to the touch they are finished.
